A Japanese Pancake variant, characterized by being much thicker, fluffier and airier. They’re made using the same ingredients as regular pancakes, but with less flour, with the egg whites beaten into a meringue and using a folding technique just like souffle, hence the name. They can be made in a mold, which results in a Cake-like shape and more compressed structure.
