A variety of Soumen (very thin wheat noodles) that is 'served' in a flume of bamboo filled with cold water - more expensive locales forego the bamboo entirely and let an actual stream carry the noodles. As the noodles pass by, diners must pluck them out of the flume with their chopsticks.
